- Preheat oven to 325°. Lightly grease (2 1/2 or 2 3/4-inch) muffin pan cups; set aside.
- Combine cream cheese and sugar in large bowl. Beat at medium speed of electric mixer until light and fluffy, about 2 minutes, scraping side of bowl 1 or 2 times. Add eggs and vanilla; beat until well blended, about 2 minutes.
