Ingredients

  • 1 box chopped broccoli, thawed and well drained
  • 1 stick margarine, melted
  • 4 eggs, beaten
  • 6 oz cottage cheese
  • 1 tsp salt
  • 1 large onion, chopped
  • 1 box Jiffy Cornbread mix

Instructions

  1. Mix together eggs, cottage cheese, salt, chopped onion, melted margarine, and thawed, well-drained chopped broccoli.
  2. Add the Jiffy Cornbread mix last, mixing until just combined.
  3. Pour the mixture into a well-greased baking dish.
  4. Bake at 400°F for 20-30 minutes, until the top is golden brown.
  5. Serve hot.
