  • 12 marshmallows
  • 1/2 c. chopped pecans

  • 1 c. pineapple juice

Tips & Substitutions

For a lighter version, consider using low-fat cottage cheese and whipped cream. If you're short on time, you can substitute the homemade pineapple juice with store-bought juice. To enhance flavor, add a splash of lime juice or zest. Make sure the jello is completely dissolved before adding other ingredients for a smooth texture. This salad is also delicious with added fruit like mandarin oranges or grapes.

Serving Suggestions

This salad is a delightful side dish at potlucks or holiday gatherings. It pairs beautifully with grilled meats or can be served as a light dessert. For a refreshing brunch option, consider serving it alongside the Quick Caramel Coffee Cake. Garnish with additional pecans or a sprig of mint for an appealing presentation.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. If the salad is too firm after chilling, you can gently stir in a little extra whipped cream to loosen it up. Avoid freezing, as the texture may change once thawed. For best results, serve cold.
