Mini Corn Muffins

Ingredients

  • 2 None large eggs
  • 1/2 cup sour cream
  • 1 (8.5 oz) package Jiffy corn muffin mix
  • 2 tbsp chopped jalapeno pepper
  • 1/4 tsp chili powder
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F. Lightly grease 2 - 12-cup mini muffin pans.
  2. Whisk together eggs and sour cream. Stir in corn muffin mix, jalapeno pepper and chili powder then fold in cheese. Distribute between muffin pans and bake for 20 mins, or until light golden brown.
