Mini Spring Roll Salad

- Preheat the oven to 400°F. Place the spring roll on a baking tray and cook for 15 minutes (or according to pack instructions) until crisp and piping hot.
- Meanwhile, whisk together the oil, vinegar and soy sauce and season to taste with freshly ground black pepper. Place the salad leaves and onion in a bowl and add the dressing, tossing gently to coat. Divide the salad and spring rolls between 4 serving plates. Garnish with whole chives and serve with the sweet chilli dipping sauce in small bowls.
