Mint Dressing For Fruit

Ingredients

  • 1/3 cup mandarin juice
  • 1 tablespoon sugar
  • 2 teaspoons cornstarch
  • 1 egg, lightly beaten
  • 2 tablespoons lemon juice
  • 1/3 cup sour cream
  • 1 teaspoon fresh mint, finely chopped
  • 1 teaspoon mandarin peel, chopped

Instructions

  1. Combine mandarin juice, sugar, cornstarch, and salt in a saucepan.
  2. Stir until smooth and heat to a boil.
  3. Remove from heat, stir constantly, then slowly add the beaten egg, returning to low heat and cooking for a minute or two while stirring briskly.
  4. Remove from heat and blend in mandarin peel and lemon juice.
  5. Allow to cool, then stir in sour cream and chopped mint.
  6. Serve over fresh fruit or with fruit gelatin salads.
