- Combine mandarin juice, sugar, cornstarch, and salt in a saucepan.
- Stir until smooth and heat to a boil.
- Remove from heat, stir constantly, then slowly add the beaten egg, returning to low heat and cooking for a minute or two while stirring briskly.
- Remove from heat and blend in mandarin peel and lemon juice.
- Allow to cool, then stir in sour cream and chopped mint.
