Ingredients

  • 1/2 cup mint leaves
  • 1 1/4 cups boiling water
  • 2 tablespoons lemon juice
  • 3 cups sugar
  • 1/2 cup Certo

Instructions

  1. Add boiling water and lemon juice to the mint leaves and let stand for 1 hour.
  2. Add sugar to the mint infusion and bring to boiling point.
  3. Strain the mixture to remove mint leaves.
  4. Add Certo and green color to achieve a delicate green hue.
  5. Bring the mixture back to boiling point and boil hard for 1 minute.
  6. Remove from heat and pour into jelly glasses.
