Mint Meringues
Mint Meringues are crisp, airy treats infused with mint flavor, accented by chocolate bits, perfect for a light, sweet snack or elegant dessert for entertaining.

Instructions
- Preheat oven to 350°F (175°C).
- Beat egg whites until stiff peaks form.
- Mix salt and cream of tartar, then add to sugar, and gradually fold into the egg whites.
- Add vanilla and lemon juice, then fold in the chocolate bits.
- Add 4 to 5 drops of green food coloring and gently fold to combine.
- Drop by teaspoonfuls onto cookie sheets lined with parchment paper.
- Bake in the preheated oven for approximately 1 hour.
- Turn off the oven and leave the meringues inside for 8 hours to dry out.
- Remove from oven and serve.
