Mint Meringues

Mint Meringues are crisp, airy treats infused with mint flavor, accented by chocolate bits, perfect for a light, sweet snack or elegant dessert for entertaining.

Ingredients

  • green food coloring
  • sugar
  • vanilla extract
  • lemon juice
  • egg white
  • chocolate bits
  • cream of tartar
  • salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat egg whites until stiff peaks form.
  3. Mix salt and cream of tartar, then add to sugar, and gradually fold into the egg whites.
  4. Add vanilla and lemon juice, then fold in the chocolate bits.
  5. Add 4 to 5 drops of green food coloring and gently fold to combine.
  6. Drop by teaspoonfuls onto cookie sheets lined with parchment paper.
  7. Bake in the preheated oven for approximately 1 hour.
  8. Turn off the oven and leave the meringues inside for 8 hours to dry out.
  9. Remove from oven and serve.
