Minted Berry Soup

Ingredients

  • 4 c. strawberries, boysenberries or raspberries
  • 1/4 c. brown sugar, packed
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1 bottle California Sauterne
  • 2 Tbsp. chopped fresh mint
  • 1 envelope unflavored gelatin
  • 1/3 c. cold water
  • mint sprigs

Instructions

  1. Wash and hull berries.
  2. Crush berries lightly with a fork. Place in a saucepan; stir in brown sugar, salt, cinnamon and cloves.
  3. Add Sauterne; bring to a boil.
  4. Add chopped mint; simmer 2 or 3 minutes.
