Ingredients

  • 1 1/2 dozen lemons (rinds and juice)
  • 4 cups water
  • 3 cups sugar
  • 6 cups canned pineapple juice
  • green food coloring
  • 1 drop peppermint flavoring

Instructions

  1. Simmer lemon rinds with water and sugar for 5 minutes.
  2. Cool the mixture and squeeze out lemon rinds, then discard them.
  3. Add lemon juice and canned pineapple juice to the mixture.
  4. Add green food coloring as needed and peppermint flavoring.
  5. Mix in ginger ale and garnish with fresh mint before serving.
