Ingredients

  • pastry for 2-crust pie
  • 4 cups blackberries, washed and drained
  • 1 tablespoon cornstarch
  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 2 teaspoons lemon juice

Instructions

  1. Preheat oven to 425°F.
  2. Line a 9-inch pie plate with slightly more than half of the pastry.
  3. Lightly toss together the blackberries, cornstarch, sugar, salt, and lemon juice.
  4. Fill the lined pie plate with the berry mixture.
  5. Roll out the remaining pastry and cut a few slits in the top crust.
  6. Cover the filling with the top crust, sealing the edges well.
  7. Brush the crust with cream or beaten egg yolks for a glossy finish.
  8. Bake for 45 minutes or until the crust is golden brown.
