Ingredients

  • 1/4 c. chopped onion
  • 1/4 c. water
  • 1/2 c. beer
  • 1 lb. catfish nuggets
  • 1/2 c. canned tomatoes, chopped
  • salt and pepper to taste
  • seafood seasoning
  • 1/2 c. frozen peas, thawed
  • 2 c. cooked rice

Instructions

  1. In a large saucepan, cook the onion in the water until it softens.
  2. Add the beer and catfish and cook over medium heat until done (3 to 5 minutes).
  3. Combine the cooked rice, catfish/onion mixture, chopped tomatoes, spices and the peas.
  4. Place in 8-inch square microwave dish and heat in microwave on Medium power for 3 to 3 1/2 minutes until heated through.
  5. If more moisture is needed, add more chopped tomatoes.
