- In a large saucepan, cook the onion in the water until it softens.
- Add the beer and catfish and cook over medium heat until done (3 to 5 minutes).
- Combine the cooked rice, catfish/onion mixture, chopped tomatoes, spices and the peas.
- Place in 8-inch square microwave dish and heat in microwave on Medium power for 3 to 3 1/2 minutes until heated through.
- If more moisture is needed, add more chopped tomatoes.
