Ingredients

  • 4 (10 oz.) packages frozen chopped spinach
  • 3 lb. imitation crab
  • 1/2 cup butter or oleo
  • 1/2 cup flour
  • 3 cups milk
  • 1 cup dry white wine
  • 1/2 cup chopped scallions
  • salt to taste
  • pepper to taste
  • paprika

Instructions

  1. Spread thawed and drained chopped spinach evenly in the bottom of two 9 x 13-inch casseroles.
  2. Arrange imitation crab evenly on top of the spinach in each casserole.
  3. Melt butter in a saucepan over low heat.
  4. Stir in flour until well combined.
  5. Gradually add milk, stirring constantly to create a smooth sauce.
  6. Add white wine and chopped scallions to the sauce.
  7. Cook over low heat, stirring constantly, until the sauce bubbles and thickens.
  8. Season with salt, pepper, and Old Bay seasoning to taste.
  9. Add enough paprika to give the sauce a rosy color.
  10. Pour the sauce evenly over the crab in both casseroles.
  11. Sprinkle the casseroles with cheese.
  12. Bake at 350°F for 35 minutes until bubbly and golden.
  13. Casseroles can be made ahead and frozen.
  14. When ready to serve, bake frozen casseroles at 350°F for 1 1/2 hours until heated through.
