Mixed Fruit Trifle
Ingredients
- 2 c. skim milk, divided
- 3 Tbsp. sugar
- 2 eggs, beaten ⓘ
- 2 Tbsp. cornstarch ⓘ
- 2 tsp. vanilla ⓘ
- 16 ladyfingers ⓘ
- 2 Tbsp. reduced calorie strawberry jam, melted
- 2 Tbsp. cream sherry ⓘ
- 1 c. halved strawberries ⓘ
- 1 c. chopped pineapple ⓘ
- 1/2 c. halved seedless green grapes ⓘ
- 1/2 c. halved red grapes ⓘ
- 1 fresh strawberry, sliced ⓘ
- fresh mint sprig ⓘ
Instructions
- Combine 1 3/4 cups milk, sugar and eggs in medium saucepan. Combine remaining 1/4 cup milk and cornstarch in a small bowl, stirring well. Add to milk mixture.
- Cook over medium heat, stirring constantly, until mixture thickens.
- Stir in vanilla. Freeze 1 hour or until thoroughly chilled.
