Ingredients

  • 4 cups zucchini puree
  • 4 tablespoons vinegar
  • 1 teaspoon lemon juice
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • dash of allspice
  • 2 drops red food coloring

Instructions

  1. Peel, seed, and chop the zucchini coarsely.
  2. Put the chopped zucchini in a blender with vinegar and blend until smooth.
  3. Pour the blended mixture into a saucepan with remaining ingredients.
  4. Cook, stirring occasionally, until the mixture reaches the desired thickness.
  5. Allow to cool and keep refrigerated.
