Ingredients

  • 8 to 10 c. zucchini
  • 3/4 c. lemon juice
  • 1 1/4 c. sugar
  • 1/4 tsp. nutmeg
  • 1 tsp. cinnamon
  • 4 c. flour
  • 1/2 tsp. salt
  • 2 c. sugar

Instructions

  1. Peel and seed zucchini; slice thin.
  2. Cook zucchini in lemon juice until tender.
  3. Add 1 1/4 cups sugar, nutmeg and 1 teaspoon cinnamon.
  4. Simmer a few minutes.
  5. Combine flour, salt, 2 cups sugar and margarine as for pie crust.
  6. Use 1/2 cup of crumb mixture to thicken zucchini.
  7. Cool.
