Ingredients

  • 1 (11 ounce) can white shoepeg corn
  • 1 (15 ounce) can black-eyed peas
  • 2 -3 tablespoons pickled jalapeno peppers
  • 12 cup red bell pepper, chopped
  • 14 cup chopped red onion
  • 12 cup Italian dressing
  • 12 cup Catalina dressing
  • 1 bunch chopped cilantro

Instructions

  1. Mix all ingredients together and let sit for at least two hours in the fridge so that all of the flavors can blend.
  2. If using jalapeno peppers, I use prechopped, marinated ones I find at the grocery store in the refrigerated section.
  3. If you it like spicey, add fresh chopped jalapeno's for more bite.
  4. I usually double the recipe because everyone loves it.
  5. Serve with tortilla chips for dipping.
