A colorful, refreshing molded salad combining creamy avocado, sweet pineapple, and tangy lime gelatin, perfect for entertaining or a light, tropical-inspired dish for any occasion.

Ingredients

  • 3 oz lime gelatin
  • 1 cup boiling water
  • 1 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • 3 tablespoons cold water
  • 2 avocados peeled and diced
  • 13 oz can crushed pineapple

Instructions

  1. Dissolve lime gelatin in boiling water; add mayonnaise and beat until frothy.
  2. Drain pineapple, saving juice.
  3. Add pineapple juice, lemon juice, and cold water to the gelatin mixture and blend well.
  4. Stir in crushed pineapple and diced avocados.
  5. Pour the mixture into an 8-inch square Pyrex dish.
  6. Chill until the gelatin is firm.
  7. Cut into squares and serve each on a lettuce leaf.
