A colorful, tangy gelatin salad combining shredded cabbage and celery, perfect for light gatherings or as a refreshing side dish with a crisp texture and bright flavor.

Ingredients

  • 3 oz. orange gelatin
  • 1/2 tsp. salt
  • 1 c. boiling water
  • 3/4 c. cold water
  • 2 Tbsp. lemon juice
  • 2 c. shredded cabbage
  • 1/2 c. chopped celery

Instructions

  1. In a medium mixing bowl, dissolve the orange gelatin and salt in boiling water.
  2. Add cold water and lemon juice; mix well.
  3. Chill until thickened, but not set, about 30 minutes.
  4. Fold in shredded cabbage and chopped celery.
  5. Pour the mixture into a greased mold or an 8-inch square pan.
  6. Chill until firm, about 2 hours.
  7. Serve on lettuce leaves with salad dressing or mayonnaise, if desired.
