Mom'S Boston Corn Chowder

Ingredients

  • 1/4 c. butter or margarine
  • 1/4 c. chopped green pepper
  • 2 c. water
  • 1/4 tsp. pepper
  • 2 c. milk
  • 1/2 c. chopped medium onion
  • 3 c. diced potatoes
  • 2 tsp. salt
  • 1 (No. 2) can cream-style corn

Instructions

  1. Melt butter; add onion and green pepper.
  2. Saute until onion is slightly browned, stirring occasionally.
  3. Put in a large pot.
  4. Add potatoes, water, salt and pepper.
  5. Cover; bring to a boil.
  6. Switch to a low heat and cook until potatoes are tender.
  7. Add corn, milk and evaporated milk.
  8. Heat, stirring frequently, until chowder bubbles slightly.
  9. Serve immediately.
  10. Garnish each serving with chopped parsley or paprika if desired.
  11. Makes 6 servings.
