Mom's Rice Pudding combines tender rice, creamy custard, and fluffy meringue for a comforting dessert perfect for family gatherings and special occasions.

Ingredients

  • 1 1/2 cups rice
  • 2 cups milk
  • 3 eggs
  • 2/3 cup sugar
  • 2 teaspoons vanilla
  • 3 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 cup cornstarch

Instructions

  1. Cook rice until tender and set aside.
  2. Mix flour or cornstarch with sugar and salt.
  3. Separate eggs and set whites aside.
  4. Beat yolks with a fork and mix with milk.
  5. Combine the yolk mixture with the cornstarch and sugar mixture and cook over medium heat until boiling.
  6. Boil while stirring for 1 minute.
  7. Remove from heat and stir in butter and vanilla.
  8. Sweeten the rice to taste and mix with the pudding.
  9. Whip egg whites with 1/8 teaspoon cream of tartar until foamy.
  10. Gradually add 1/4 cup sugar while whipping until swirls are thick.
  11. Add 1/2 teaspoon vanilla to the egg whites.
  12. Pour the pudding and rice mixture into a baking dish and spread with meringue.
  13. Brown in a preheated oven at 350°F.
