- Cook rice until tender and set aside.
- Mix flour or cornstarch with sugar and salt.
- Separate eggs and set whites aside.
- Beat yolks with a fork and mix with milk.
- Combine the yolk mixture with the cornstarch and sugar mixture and cook over medium heat until boiling.
- Boil while stirring for 1 minute.
- Remove from heat and stir in butter and vanilla.
- Sweeten the rice to taste and mix with the pudding.
- Whip egg whites with 1/8 teaspoon cream of tartar until foamy.
- Gradually add 1/4 cup sugar while whipping until swirls are thick.
- Add 1/2 teaspoon vanilla to the egg whites.
- Pour the pudding and rice mixture into a baking dish and spread with meringue.
- Brown in a preheated oven at 350°F.
