Ingredients

  • 4 c. cooked macaroni
  • 1/2 c. grated Cheddar cheese
  • 3 Tbsp. grated red onion
  • 1/2 green pepper, finely chopped
  • 1/2 red pepper, finely chopped
  • 1/4 c. mayonnaise
  • 3 Tbsp. sour cream
  • 1 Tbsp. freshly chopped parsley
  • juice of 1/2 lemon
  • salt and pepper to taste

Instructions

  1. Mix the cooked and cooled macaroni with the grated Cheddar cheese, red onion, green pepper, and red pepper.
  2. In a separate bowl, combine mayonnaise, sour cream, chopped parsley, lemon juice, salt, and pepper.
  3. Pour the dressing over the macaroni mixture and toss until well coated.
