Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic
  • 2 ounces fresh basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound mostaccioli or other tube-shaped pasta
  • 1 1/2 pounds ripe tomatoes or 1 large can Italian plum tomatoes

Instructions

  1. In a blender or food processor, combine olive oil, balsamic vinegar, and garlic.
  2. Add half of the basil and blend for one minute.
  3. Add salt and black pepper to the mixture.
  4. Pour the sauce over warm cooked mostaccioli.
  5. Add chopped tomatoes and toss to combine.
  6. Garnish with remaining basil leaves and serve.
