Sweet and crunchy peanut brittle with toasted peanuts and caramelized sugar, perfect for candy lovers and sharing during holidays or as a homemade treat.

Ingredients

  • 1 cup raw peanuts
  • 1 cup granulated sugar
  • 1/2 cup white corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon butter or margarine
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  1. In a 1 1/2-quart casserole dish, stir together the peanuts, sugar, corn syrup, and salt.
  2. Place in microwave oven and cook for 8 minutes, stirring well after 4 minutes.
  3. Add butter and vanilla to the syrup mixture, blending well.
  4. Return dish to oven and cook for an additional 1 to 2 minutes.
  5. Peanuts will be lightly browned and syrup will be very hot.
  6. Add baking soda and gently stir until light and foamy.
  7. Pour mixture onto a lightly oiled cookie sheet.
  8. Allow the brittle to cool and harden.
  9. Store in an airtight container.
