  • 1/2 lb. fresh mushrooms
  • 2 Tbsp. butter
  • 1 Tbsp. chopped chives or spring onions
  • salt
  • pepper
  • 1 Tbsp. sherry

Instructions

  1. Melt butter in a pan; as it begins to foam, add mushrooms and salt. Stir constantly for 3 minutes.
  2. Add pepper, sherry, and additional butter if needed.
  3. As juice begins to come from mushrooms, remove them to a warm dish.
  4. Add white wine to deglaze the pan and boil down.
  5. Pour the wine mixture over the mushrooms and serve.
