Ingredients

  • grated peel from large lemon
  • 2 Tbsp. flour
  • 1 c. milk
  • 3 large egg yolks
  • 3 large egg whites
  • 3 Tbsp. fresh lemon juice
  • 1 Tbsp. oleo

Instructions

  1. Mix together the grated lemon peel, lemon juice, flour, and melted oleo.
  2. Beat until smooth.
  3. Add milk, sugar, and egg yolks; continue blending until well combined.
  4. In a separate bowl, beat egg whites until stiff peaks form.
  5. Fold the egg whites into the lemon mixture gently.
  6. Pour the mixture into the prepared crust.
  7. Bake for 40 to 50 minutes at 325°F.
  8. Serve chilled and refrigerate up to 2 days.
