My Noodle Pudding

Ingredients

  • 1 (12 ounce) package wide egg noodles
  • 1 (1 lb) container4% small curd cottage cheese
  • 12 cup raisins
  • 1 tart apple (granny smith or similar)
  • 2 eggs
  • 14 cup butter
  • 3 tablespoons vanilla extract
  • 1 teaspoon salt
  • 2 ounces light agave nectar (or other sweetener) or 2 ounces Karo syrup (or other sweetener)
  • 3 tablespoons ground cinnamon

Instructions

  1. Cook noodles till desired texture.
  2. Drain and place in mixing bowl.
  3. Add butter and mix until fully melted.
  4. Peel, core and shred apple.
  5. Add to mixture along with raisins, vanilla, salt, sweetener and cottage cheese.
  6. Mix well but gently.
  7. Beat eggs in a separate bowl and add to mixture.
  8. Place noodle mixture in a 9 X 13 caserole dish.
  9. Top with cinnamon/sugar mixture and cover with aluminum foil.
  10. Bake at 350 degrees for 45 minutes.
  11. Serve warm or at room temeprature anytime you like.
  12. Also goes well as a side dish with poultry or meat.
