My Noodle Pudding
Ingredients
- 1 (12 ounce) package wide egg noodles ⓘ
- 1 (1 lb) container4% small curd cottage cheese ⓘ
- 12 cup raisins ⓘ
- 1 tart apple (granny smith or similar) ⓘ
- 2 eggs ⓘ
- 14 cup butter ⓘ
- 3 tablespoons vanilla extract ⓘ
- 1 teaspoon salt ⓘ
- 2 ounces light agave nectar (or other sweetener) or 2 ounces Karo syrup (or other sweetener) ⓘ
- 3 tablespoons ground cinnamon ⓘ
Instructions
- Cook noodles till desired texture.
- Drain and place in mixing bowl.
- Add butter and mix until fully melted.
- Peel, core and shred apple.
- Add to mixture along with raisins, vanilla, salt, sweetener and cottage cheese.
- Mix well but gently.
- Beat eggs in a separate bowl and add to mixture.
- Place noodle mixture in a 9 X 13 caserole dish.
- Top with cinnamon/sugar mixture and cover with aluminum foil.
- Bake at 350 degrees for 45 minutes.
- Serve warm or at room temeprature anytime you like.
- Also goes well as a side dish with poultry or meat.
