Ingredients

  • 1 Tbsp. cornstarch
  • 6 tsp. sugar
  • 1/2 cup water
  • 3 egg whites
  • few grains salt

Instructions

  1. Mix cornstarch, sugar, water, and salt in a saucepan; cook until thick and clear. Cool slightly.
  2. Beat egg whites with an electric mixer until frothy.
  3. Continue beating while pouring in the cornstarch mixture.
  4. Beat for 5 minutes until the meringue is stiff and glossy.
  5. Use the meringue to cover cooled pie filling in a pie shell, sealing edges to the crust.
  6. Bake at 450°F (230°C) for 5 to 7 minutes or until the meringue is golden.
