Night Before Mashed Potatoes

Creamy night-before mashed potatoes are perfect for make-ahead comfort food. Fluffy and rich with cream cheese and sour cream, they develop deep flavor after refrigeration. Ideal for family dinners and holiday gatherings, they can be prepared in advance and baked to perfection just before serving.

Ingredients

  • 8 to 10 potatoes, peeled
  • 8 oz. cream cheese, softened
  • 1 c. sour cream
  • salt
  • pepper

Instructions

  1. Boil and drain the peeled potatoes.
  2. Whip the hot potatoes, adding softened cream cheese and sour cream.
  3. Whip until fluffy and smooth. Add salt and pepper to taste.
  4. Place the mixture into a buttered 9 x 13-inch baking dish.
  5. Dot generously with butter and sprinkle with seasoned salt.
  6. Cover with foil and refrigerate. The potatoes can be frozen at this stage and thawed before baking.
  7. Bake, covered with foil, for 15 minutes at 325°F (163°C).
  8. Uncover and continue baking for an additional 20 minutes.
