Potluck Vegetable Casserole
A hearty and cheesy vegetable casserole perfect for potlucks and family dinners. Combining tender cauliflower, broccoli, corn, mushrooms, and melted Swiss cheese, topped with crunchy bread crumbs, it offers a comforting blend of flavors and textures that appeal to all ages and preferences.
Ingredients
- 1 (17 oz.) can whole kernel corn ⓘ
- 1 (10 oz.) pkg. frozen cauliflower
- 1 (10 oz.) pkg. frozen cut broccoli ⓘ
- 1 (4 oz.) can sliced mushrooms ⓘ
- 1 (17 oz.) can cream-style corn ⓘ
- 2 c. shredded Swiss cheese ⓘ
- 1 (10 3/4 oz.) can condensed cream of celery soup ⓘ
- 2 Tbsp. butter ⓘ
- 1 1/2 c. soft rye or white bread crumbs ⓘ
Instructions
- Drain the whole kernel corn, cooked cauliflower, cooked broccoli, and sliced mushrooms.
- Cut up large pieces of cauliflower into smaller bites.
- In a bowl, combine the cream-style corn, shredded Swiss cheese, and condensed cream of celery soup.
- Fold in the drained vegetables into the mixture.
- Pour the mixture into a 12 x 7 1/2 x 2-inch baking dish.
- Melt the butter in a small saucepan or microwave.
- Toss the bread crumbs with the melted butter until evenly coated.
- Sprinkle the bread crumbs atop the vegetable mixture.
- Bake uncovered in a preheated 375°F oven for 30 to 35 minutes or until hot and bubbly.
