Nishua is a delightful braided bread infused with cardamom and lightly glazed, perfect for sharing during special occasions or enjoying with tea and friends.

Ingredients

  • 2 cups milk
  • 1 yeast cake
  • 3/4 cup sugar
  • 1/2 cup crushed cardamom seed
  • 1/2 cup shortening
  • 2 tablespoons warm water
  • 1 teaspoon salt
  • 2 eggs
  • 6 to 7 cups flour

Instructions

  1. Dissolve yeast in warm water and let sit until frothy.
  2. Warm milk, then add the dissolved yeast and let cool slightly.
  3. Combine all ingredients except flour and mix thoroughly.
  4. Gradually add flour, mixing and kneading until a soft dough forms.
  5. Let the dough rise until doubled in size.
  6. Divide the dough into 3 equal parts.
  7. Divide each part into 3 smaller portions.
  8. Roll each small portion into a long tube with your hands.
  9. Braid 3 tubes together to form a loaf.
  10. Place the braided loaf on a greased pan and let rise until puffy.
  11. Before baking, brush the top with 3/4 tablespoon sugar mixed with a little water for glaze.
  12. Bake at 350°F (175°C) for 25 minutes until golden brown.
  13. After baking, sprinkle with sugar before serving.
