Ingredients

  • 1 large onion, sliced
  • 1 clove garlic
  • 2 Tbsp. olive oil
  • 2 lb. zucchini squash, cut up
  • 4 tomatoes, cut up (may use canned)
  • 1/2 chopped green pepper
  • salt and pepper to taste
  • minced parsley to taste
  • Parmesan cheese to taste

Instructions

  1. In a large skillet, sauté the onion and garlic in olive oil.
  2. Add the zucchini, tomatoes, green pepper, salt, and pepper.
  3. Stir and let simmer until the zucchini is cooked, firm, and not mushy.
  4. Transfer to a serving dish and garnish with minced parsley and Parmesan cheese.
