No-Clam Chowder

Ingredients

  • 1 medium onion, thinly sliced
  • 3 Tbsp. bacon drippings
  • 1 1/2 c. chopped, peeled potatoes
  • 1/2 c. water
  • 1 (17 oz.) can cream-style corn
  • 2 c. milk
  • 1 tsp. salt
  • pepper to taste
  • 5 slices crisp-fried bacon

Instructions

  1. Saute onion in bacon drippings in a saucepan until lightly browned.
  2. Add potatoes and water.
  3. Cook, uncovered, over medium heat for 10 to 15 minutes or until tender.
  4. Add corn, milk, salt and pepper.
  5. Heat to serving temperature over low heat, stirring frequently.
  6. Do not boil.
  7. Ladle into soup bowls.
  8. Top with crumbled bacon.
  9. Serves 5.
