Ingredients

  • 1 (7 1/2 oz.) can pineapple
  • 8 oz. cottage cheese
  • 1 pkg. Knox unflavored gelatin
  • 1 Tbsp. lemon juice
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 cup sugar
  • cinnamon

Instructions

  1. Drain crushed pineapple and save about 1/4 cup of the juice.
  2. Blend the pineapple juice, lemon juice, egg, vanilla, sugar, and unflavored gelatin until well combined.
  3. Add cottage cheese gradually and blend until smooth.
  4. Pour the mixture into a baking dish.
  5. Arrange pineapple on top and sprinkle with cinnamon.
  6. Bake at 350°F (175°C) for 30 to 35 minutes.
  7. Chill well before cutting and serving.
