Instructions
- Drain crushed pineapple and save about 1/4 cup of the juice.
- Blend the pineapple juice, lemon juice, egg, vanilla, sugar, and unflavored gelatin until well combined.
- Add cottage cheese gradually and blend until smooth.
- Pour the mixture into a baking dish.
- Arrange pineapple on top and sprinkle with cinnamon.
- Bake at 350°F (175°C) for 30 to 35 minutes.
- Chill well before cutting and serving.
