Ingredients

  • 1 c. all-purpose flour
  • 2 Tbsp. sugar
  • 2 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 beaten egg
  • 1 c. milk
  • 2 Tbsp. cooking oil

Instructions

  1. In a mixing bowl, thoroughly stir together the flour, sugar, baking powder, and salt.
  2. Combine the beaten egg, milk, and cooking oil; add all at once to the dry ingredients, beating until blended.
  3. Heat a lightly greased griddle until hot.
  4. Pour batter onto the griddle to form about 4-inch pancakes.
  5. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown.
