Ingredients

  • 1 small pkg. elbow macaroni
  • 1 (24 oz.) can whole tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1 chopped onion
  • 1 tsp. garlic salt
  • 1 tsp. oregano
  • 1 (16 oz.) pkg. thinly sliced pepperoni, chopped
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Cook the elbow macaroni in 2 quarts of water; drain and set aside.
  2. In a saucepan, combine the whole tomatoes, tomato sauce, chopped onion, garlic salt, oregano, and chopped pepperoni (reserve 6 or 7 slices for garnish). Simmer the mixture for 30 minutes.
  3. In a large bowl or pan, combine the sauce and cooked macaroni; mix well.
  4. Place half of the mixture in a greased 2-quart casserole dish and fold in half of the shredded Monterey Jack cheese.
  5. Add the remaining macaroni mixture into the casserole and fold in the remaining cheese, reserving some cheese for topping.
  6. Garnish the top with pepperoni slices and shredded cheese, then sprinkle with paprika.
  7. Bake at 350°F for 20 to 25 minutes or until the casserole is heated through and the cheese is melted.
