Ingredients

  • 1 Tbsp. olive oil
  • 1 garlic clove, crushed and chopped
  • 1/4 cup chopped onion
  • 1 Tbsp. butter
  • 12 slices pepperoni
  • 4 eggs, well beaten
  • Provolone cheese
  • grated Italian cheese (1/4 cup combined)
  • marinara sauce

Instructions

  1. Combine olive oil, butter, crushed garlic, chopped onion, and pepperoni in an omelette pan and sauté until the onion is clear.
  2. Pour beaten eggs into the pan, top with provolone and grated Italian cheese, cover, and cook over low heat until the eggs are firm.
  3. Top with marinara sauce before serving.
