Ingredients

  • 2 lb. fresh or frozen haddock fillets
  • 1/4 lb. salt pork
  • 1 medium onion
  • 2 c. water
  • 3 c. diced raw potatoes
  • 1 qt. milk
  • 1 small tin evaporated milk
  • 8 soda crackers, ground fine
  • 3 Tbsp. butter

Instructions

  1. Saute salt pork cut into small pieces until lightly browned.
  2. Add finely chopped onion and cook slowly until tender, without browning.
  3. Add diced potatoes and 2 cups water, then bring to a simmer.
  4. Add cut-up haddock fillets and simmer gently, stirring often.
  5. In a separate pot, heat milk, ground soda crackers, butter, parsley, and seasonings.
  6. Combine the fish mixture with the milk mixture and stir over low heat until thoroughly blended and thickened.
  7. Never allow the chowder to boil during the final mixing.
  8. Serve hot, enjoying the rich, smoky, and creamy flavors of this traditional fish chowder.
