Nutty Baked Chicken

Ingredients

  • 4 c. cooked, cut-up chicken
  • 4 c. thinly sliced celery
  • 1 c. chopped pecans
  • 1 1/2 c. grated cheese
  • 2 c. mayonnaise
  • 4 Tbsp. onion
  • 4 Tbsp. lemon juice

Instructions

  1. Lightly toss the chicken, celery and pecans together.
  2. Puree a sauce of the mayonnaise, onion, lemon juice and 1 cup cheese in a blender.
  3. Toss the chicken mixture with the sauce.
  4. Pour into a 9 x 13-inch casserole.
  5. Top with 1/2 cup cheese and bake at 375° for 15 to 20 minutes.
  6. Serve hot.
  7. Makes 6 to 8 servings.
