Ingredients

  • 2 egg whites
  • 1/8 tsp. salt
  • 1/2 cup sugar
  • 1/2 tsp. vanilla extract
  • 1 cup flaked coconut
  • 1/2 cup pecans, chopped finely

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine egg whites and salt in a large mixer bowl.
  3. Beat at medium speed until foamy.
  4. Add sugar gradually, beating at high speed until very stiff peaks form.
  5. Blend in vanilla extract.
  6. Gently fold in coconut and chopped pecans.
  7. Drop by teaspoonfuls onto cookie sheets lined with baking parchment.
  8. Bake for 15 to 20 minutes or until light brown.
  9. Remove from oven and transfer to wire racks to cool completely.
