Oatmeal Date Bread

Ingredients

  • 1 1/2 cups milk
  • 1 cup oatmeal (not instant)
  • 1 cup pitted dates, chopped
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 3/4 cup sugar

Instructions

  1. Bring milk almost to a simmer. Place oatmeal and dates in a large mixing bowl and add milk. Set aside to cool to room temperature. In another bowl, whisk together flour, baking powder, salt and sugar. When oat mixture is cool, beat in egg. Stir in dry ingredients, mixing well.
  2. Pour batter into a buttered 9x5 inch loaf pan. Bake at 325 degrees for 45-50 minutes or until the top is crusty and golden. Cool before slicing.
