Oceanside Ceviche

Ingredients

  • 4 ounces, weight Fresh Sea Bass, Cut Into Bite Size Pieces
  • 2 whole Fresh Limes, All The Juice And Half The Zest
  • 2 Tablespoons Olive Oil
  • 1- 1/4 Tablespoon Red Wine Vinegar
  • 1/2 cups Diced English Cucumber
  • 1/2 cups Diced Red Onion

Instructions

  1. Note: Preparation time does not include 1 hour refrigeration time.
  2. In a bowl (I use a clear glass bowl), add sea bass pieces, lime juice and zest.
  3. Gently stir.
  4. Add olive oil and red wine vinegar, and again gently stir.
  5. Cover with plastic wrap and refrigerate 1 hour.
  6. Remove from refrigerator.
  7. Add diced cucumber, diced red onion, and salt and pepper to taste.
  8. Gently stir.
  9. Serve in your favorite fluted glasses or stemware.
  10. We love this with homemade lime tortilla chips.
