O'Henrietta Bars are rich, chewy oatmeal bars with chocolate and peanut butter, perfect for sweet snack cravings and suitable for picnics, potlucks, or casual gatherings.

Ingredients

  • 1/2 cup oleo, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup Karo syrup
  • 1 teaspoon vanilla
  • 3 cups quick cook oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup Skippy creamy peanut butter

Instructions

  1. Preheat oven to 350°F.
  2. Grease an 8 or 9-inch square baking pan.
  3. In a mixing bowl, combine oleo, brown sugar, Karo syrup, and vanilla. Mix well.
  4. Add quick cook oats and stir until evenly combined.
  5. Press half of the oat mixture into the prepared baking pan.
  6. Sprinkle semi-sweet chocolate chips over the layer.
  7. Dissolve peanut butter in a small amount of warm water if needed, then evenly spread over the chocolate chips.
  8. Top with the remaining oat mixture, pressing down gently.
  9. Bake in the preheated oven for about 15 minutes or until lightly browned.
  10. Allow to cool before cutting into bars.
