Ingredients

  • 4 lb. sweet potatoes
  • 1/2 c. orange juice
  • 1/2 c. heavy cream
  • 4 Tbsp. unsalted butter
  • 1/4 c. light brown sugar
  • 1 tsp. ground nutmeg
  • 1/2 tsp. ground cinnamon
  • 2 tsp. kosher salt
  • 1 tsp. freshly ground black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Scrub the sweet potatoes, prick them several times with a knife or fork, and bake for 1 hour or until very soft when pierced with a knife.
  3. Remove from the oven and let cool enough to handle.
  4. Scoop out the insides of the sweet potatoes into a bowl.
  5. Add orange juice, heavy cream, melted butter, brown sugar, nutmeg, cinnamon, salt, and pepper to the bowl.
  6. Mix together until combined, but not smooth.
  7. Transfer the mixture into a baking dish.
  8. Bake for 20 to 30 minutes until heated through.
