Ingredients

  • 7 lb. small okra pods
  • 8 to 9 garlic cloves
  • 2/3 cup canning salt
  • 4 teaspoons dill seed
  • 6 small hot peppers
  • 6 cups water
  • 6 cups vinegar

Instructions

  1. Wash and trim the okra pods.
  2. Fill hot pint jars firmly with whole okra, leaving 1/2-inch headspace.
  3. Place 1 garlic clove in each jar.
  4. Combine canning salt, dill seed, hot peppers, water, and vinegar in a large saucepan and bring to a boil.
  5. Pour hot pickling solution over the okra, leaving 1/2-inch headspace.
  6. Remove air bubbles from the jars.
  7. Wipe jar rims with a clean cloth.
  8. Adjust the lids on the jars.
  9. Process the jars in a boiling water bath for 10 minutes.
