Ingredients

  • 4 large cucumbers (about 8-inches long, 2 1/2 lb.)
  • ice water
  • 1 qt. white vinegar
  • 2 c. sugar
  • 2 tsp. salt
  • 6 small onions, peeled
  • 1 Tbsp. mixed pickling spice

Instructions

  1. Wash cucumbers; do not pare.
  2. Cut lengthwise into 6 to 8 strips, depending on the size of the cucumbers.
  3. Place cucumber strips in a shallow baking dish.
  4. Add enough ice water to cover the cucumber strips.
  5. Let stand for 3 hours.
  6. Sterilize a 2-quart jar and leave it in hot water until ready to fill.
