Ingredients

  • 1 1/2 cups sugar
  • 3 tablespoons cornstarch
  • 1 cup water
  • Grated rind of 1 lemon
  • Juice of 2 lemons
  • 3 egg yolks
  • 3 egg whites

Instructions

  1. Combine sugar and cornstarch thoroughly in a heavy boiler.
  2. Add water, grated lemon rind, and lemon juice to the mixture.
  3. Cook over low heat until the mixture begins to thicken.
  4. Beat egg yolks slightly.
  5. Add hot mixture gradually to the beaten egg yolks, stirring constantly.
  6. Return the mixture to the boiler and continue to cook over low heat until it thickens to the desired consistency.
  7. Pour the cooled mixture into a 9-inch pastry shell.
  8. Top with meringue made from the egg whites.
  9. Brown the meringue in an oven preheated at 350°F.
