Ingredients

  • 1 can salmon (red or pink)
  • 3 cups saltine cracker crumbs
  • 1 tablespoon minced onion
  • 3 tablespoons minced green pepper
  • 1/8 cup melted butter
  • 1 tablespoon fresh lemon juice
  • 2 eggs
  • 3/4 cup liquid (salmon liquid plus milk)

Instructions

  1. Drain and flake the salmon, reserving the liquid.
  2. Combine the salmon with saltine cracker crumbs, minced onion, minced green pepper, melted butter, and lemon juice.
  3. In a separate bowl, mix the eggs with the reserved salmon liquid.
  4. Stir the egg mixture carefully into the salmon mixture, mixing well.
  5. Turn the mixture into a greased 9 x 5 x 3-inch loaf pan.
  6. Bake at 350°F for 45 minutes.
  7. Let stand for 5 minutes, then unmold onto a platter.
