Ingredients

  • 1 pint sweet milk
  • 1 cup cornmeal, sifted
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 eggs, separated
  • 1 heaping tablespoon butter

Instructions

  1. Scald the milk and slowly add the sifted cornmeal, sugar, and salt, stirring constantly.
  2. Cook until the mixture puffs up, then set off the stove.
  3. Add the heaping tablespoon of butter and allow to cool for 3 minutes.
  4. Stir in the well-beaten egg yolks.
  5. Fold in the stiffly beaten egg whites.
