Orange Chip Muffins

Ingredients

  • 2 1/4 c. flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. sugar
  • 1/2 c. milk
  • 1 egg
  • 1/3 c. orange juice
  • 1/4 c. butter, melted
  • 1 tsp. grated orange rind
  • 1/4 (12 oz.) pkg. chocolate chips (mini)

Instructions

  1. Preheat oven to 425°.
  2. In large bowl, combine flour, baking powder, baking soda and salt; make well in center.
  3. In small bowl, combine sugar, milk, egg, orange juice, butter and orange rind; mix until blended.
  4. Add to well in flour mixture; stir until dry ingredients are just moistened.
  5. Stir in semi-sweet chocolate chips.
  6. Spoon into greased muffin cups, filling each about 3/4 full.
  7. Bake 15 to 17 minutes or until lightly browned.
  8. Cool.
